GRAPE: 90% Tempranillo, 10% Viura.
APPELLATION: Rioja DOCa
VINIFICATION: Manual harvest in 18 Kg crates. Spontaneous fermentation in open tank, without destemming, maceration of one month. Unfiltered or stabilized. Aged 15 months in used barrel.
TASTING NOTES: Fresh, elegant and vibrant red wine. Chalky and refined, with aromas of clove and stem ginger, a racy, grippy palate and undertones of mint and wild thyme.
FOOD PAIRING: Red or game meat, roasts, poultry, white meat, ham, charcuterie, cured cheese or blue cheese.

PRODUCER:
Carlos Sánchez, who defines himself as a winegrower, studied teaching, although he soon realized that the viticulture and what surrounds the world of wine mean much more to him. The philosophy behind his wines is to produce pure wines, with minimal intervention in the vineyard and in the winery.
Carlos seeks to reflect the places and towns where the grapes come from. Little interventionist elaboration, natural wines that represent the areas where they are produced, moving away from globalization and large productions.
