GRAPE: 100 % Garnacha
APPELLATION: Vinos de Madrid DO ( Gredos)
VINIFICATION: Manual harvest in 10 Kg crates. Cold maceration for 2-4 days. Spontaneus fermentation in open vats for 44 days. Malolactic fermentation un oak barrels with its lees. No filtrate and very low doses of SO2.
TASTING NOTES: Pale elegant red, aromas of red berries, insinuating, floral and delicate. Slightly dusty and elegant tannins. Expressive and open. Warm and dry year.
FOOD PAIRING: Long slow cooked roasts of beef, pork or lamb. Risottos and cheese.

PRODUCER:
Carlos Sánchez, who defines himself as a winegrower, studied teaching, although he soon realized that the viticulture and what surrounds the world of wine mean much more to him. The philosophy behind his wines is to produce pure wines, with minimal intervention in the vineyard and in the winery.
In 2014 he started in Cadalso de los Vidrios, in the Sierra de Gredos, Las Bacantes project. An interesting red wine made with grenache vines of a single old vineyard, worked sustainably and ecologically of 0,9Ha.
Carlos seeks to reflect the places and towns where the grapes come from. Little interventionist elaboration, natural wines that represent the areas where they are produced, moving away from globalization and large productions.
