GRAPE: Tinta de Toro and Albillo Mayor
APPELLATION: Toro DO
VINIFICATION: We chose the 21 best plots of our suppliers we work with since 1998. Old, low density vineyards, exclusively bushvines. Manual harvest in boxes.
Fermented in wooden and stainless steel tanks of 6000kg. Aged for 14 months (80% in Foudres, 20% in barrels)
TASTING NOTES: The wine is juicy, round and full-bodied, with abundant, slightly grainy tannins. The tannins are surprisingly elegant, and there’s none of that rusticity often associated with Toro.
FOOD PAIRING: Any kind of cured meats, as well as with soups, stews, poultry, rice or cheeses.

PRODUCER: Since its origin, the main purpose of Compañia de Vinos Telmo Rodriguez is the use only of native varieties from original areas. This philosophy contrasts with the boom of the implantation of foreign varieties, practically throughout the Spanish vineyard. Another of the initiatives to which the project wants to pay special attention, also from its origins, is the recovery of forgotten vineyards.
