 GRAPE: Almost 100% “Tinta de Toro” with its characteristic small clusters, and a little “Albillo Mayor”

APPELLATION: Toro DO

VINIFICATION: Traditional viticulture. Manual harvest in boxes.
The grapes, not completely de-stemmed, ferment with indigenous yeasts in wooden vats of 3,000kg capacity.
Gentle aging for 15-18 months in 225L barrels and 1,500L foudres.

TASTING NOTES:There is great finesse here, ripeness without excess, power and concentration but with balance. It has a vibrant palate with rich flavors and fine-grained tannins.
It’s a Toro with clout and poise.

FOOD PAIRING: Any kind of cured meats, as well as with soups, stews, poultry, rice or cheeses.

PRODUCER: Since its origin, the main purpose of Compañia de Vinos Telmo Rodriguez  is the use only of native varieties from original areas. This philosophy contrasts with the boom of the implantation of foreign varieties, practically throughout the Spanish vineyard. Another of the initiatives to which the project wants to pay special attention, also from its origins, is the recovery of forgotten vineyards.
